Bone Broth

ok this is more a guideline than a recipe as you can make a million different kinds of bone broth. What I like about it is.... well I hunt so I know exactly what type of animal has been stewed for days to make this delicious nutrient-collagen packed magic. But it’s a great way to add extra oomph to roasts and soups or just some fun snack to drink when you’ve planned poorly, don’t feel well or just want something light. So here are guidelines for a basic beef and basic chicken broth.


BEEF


Around 4lbs of bone

You want a mix of bones that contain lots of marrow and bones that have some good meat and tissues around them. Do ribs and knuckles and joint bones are my go to.

Vegetables It’s important to not go Wild here. There are like a select group of veggies good for broth and a bunch that will make it taste like shit.

*4-5 whole carrots top and end chopped skin intact *4-5 celery stalks NO LEAVES

*Yellow or white onion cut in half skin on

* 4-5 whole cloves of garlic

*10-12 mushrooms whole

* green onion one bunch throw it all in

Herbs this is where you can add some personality. Try for the most part to stick to fresh herbs. In beef broth my go to herbs are.

Sage 3-4 sprigs stem and leaves

Thyme 3-4 sprigs

Tarragon 3-4 sprigs

Parsley 1 bunch

chives about 20 stalks


Spices


2tbs pink sea salt

1TBS black pepper

1/2tsp cinnamon

1tsp smoked paprika

1TBS cumin

1TBS Apple cider vin.


INSTRUCTIONS.

put bones in large soup pot cover with water. (About 6-8 cups) add everything else. Bring to a boil then reduce heat to low and simmer for 18-48 hours. The longer you stew the more you get from the bones. But 20 hours is about all I have patience for. If you use an instant pot 2.5-3 hours is enough. Strain all ingredients away from the broth. The fun part. I like to section it off into mini mason kats for drinking and I freeze some in Cup measurements for cooking!


CHICKEN


Around 4-5 pounds of bone. Bone in skin on thigh and legs work best here. Wings are good but personally gross me out. If all you can find are drumsticks that’s great!

CHICKEN no mushroom or tarragon include LEMON GRASS.
