Pot Roast and Hash

So this is a pretty classic recipe. EXCEPT I don’t cook veggies in with the meat.


Roast

4-5lb chuck roast

4-5 white Sweet potatoes peeled and diced

2-3 cups of bone broth. Homemade pref but store will work

1 white onion chopped

3 Jalapeños sliced and seeded

2tbs minced garlic

2TBS avocado oil

salt and pepper to taste


INSTRUCTIONS.

Heat a skillet on high with 1TBS of oil. (Preferably cast iron skillet)

once hot sear roast on all sides.

When all sides are browned to seal in juices place in crockpot with broth. Salt and pepper to taste and cook for 12-16 hours until meat is fall apart tender.


HASH

15 mins before you eat. Heat skillet med high with remaining avo oil. Add sweet potatoes toss so covered in oil and cook covered stirring to not burn until potatoes are tender. Add jalapeños onion and garlic. Toss turn heat up a bit and cook until potatoes brown nicely.

Serve with roast!
