1-2 TBS avo oil
1c chopped green onion ( white and green parts) slice some up as a topping for serving as well)
2TBS minced garlic
1 jalapeño seeded and chopped
6 cups of GOOD chicken broth
1 tsp salt
2 ripe avocados diced + more for garnish
1.5-2 cups cooked, shredded chicken
1 small can diced green chilies
Handful of chopped cilantro+ more for topping
Add oil, onion, garlic and jalapeño to a pan heat until fragrant.
In a soup pot start heating chicken broth, salt and cumin. Let simmer for about 20 minutes.
Add avocado pieces and blend with immersion blender ( if you don’t have one you can let the broth COOL and then blend with avo in a blender. Until all is smooth.
Add chicken, lime juice, green chilies and cilantro.
Taste and make sure it doesn’t need a pinch more salt or little more lime for your liking.
Serve this up with bacon crumbles, thin sliced radishes, cilantro or avocado or any mix of those as additional toppings or just enjoy as is!
